Lavender Blueberry Bellini

Serves: 1 | Prep Time: 15 minutes

Ingredients:

●1 oz lavender-blue sugar

●1 oz hot water

● 1 oz fresh or frozen blueberries

● 4 oz NA sparkling wine or soda water

Instructions:

  1. Mix 1 oz lavender blue sugar with 1 oz hot water. Steep for at least 2 minutes, stirring to dissolve.

  2. Strain and allow to cool.

  3. In a blender, combine blueberries and lavender syrup. Blend until smooth.

  4. Strain through a fine mesh sieve to remove pulp and skins.

  5. Add 2 oz of the blueberry mixture to a champagne flute.

  6. Top with chilled sparkling wine.

  7. Gently stir and garnish with a few whole blueberries. Serve immediately.
